In the beginning…..

Haven was built on cake.

If we were to name the corners of the foundation, they would be these four: pecan-sour cream coffee cake, apple cake, Italian cream cake and carrot cake.

The pecan-sour cream coffee cake was the first food item that Shelly ever sold. Her customer was the Kripalu Cafe. It was an immediate hit. Her catering business grew from there and each of these cakes wound their way into people’s hearts. On the surface, there is nothing fancy about any of them, though each requires a little finesse in the preparation. (When we first opened, the coffee cake caused fits in our team of bakers, so much so that a poem was composed in its honor titled: “There Once was a Bad Coffee Cake…”.) What sets these cakes apart are our choices of ingredients. All of our baked goods begin with organic flours and sugars, local dairy and farm fresh eggs. Each additional ingredient is scrutinized as to how it will best augment flavor, texture and integrity. The picture above illustrates one of the more important decisions that we have made about our carrot cake. After much trial and error we decided that a puree of cooked carrots achieved superior results over raw, grated carrot. It provides a natural sweetness and a rich moistness. Each of these cakes is available daily in the cafe or can be pre-ordered for your special occasions.
